Buckwheat Pancakes1 C Buckwheat flour or 3/4 C Buckwheat flour and 1/4 C  regular or GF flour
1 tsp baking powder
1/2 tsp baking soda
1-2 TBSP brown sugar
Dash of salt
1 C milk
1 TBSP lemon juice or vinegar
1 egg
1 TBSP oil
Combine milk and lemon juice and let stand 5 minutes to become "buttermilk"
Mix dry ingredients together in a bowl.
Add egg and oil to milk and whisk to combine
Stir wet engredients into dry ingredients.
Bake on a griddle at 350 degrees.
Makes 12 small- medium pancakes.
